Greek Recipe Broiled Chicken

GREEK RECIPE: Broiled Chicken

  • 2 1.5 lbs broilers quartered
  • 1 Tbs dried sweet basil
  • 1/2 cup butter softened at room temperature
  • salt and pepper to taste

Wash and singe chickens to remove hair. Rub all over with some of the butter. Place chickens on a broiler rack, skin side down about 4 to 5 " away from the flame for 15 minutes. Turn skin side up and brush with remaining butter. Sprinkle with salt, pepper and sweet basil. Broil for 15 minutes more or until skin turns golden brown. Serves 4.
