Greek Recipe: Roast Chicken Oregano

GREEK RECIPE: Roast Chicken Oregano

  • 5 lb roasting chicken
  • juice of one lemon
  • 1 heaping Tbs dried oregano
  • 1/2 cup butter softened at room temperature
  • salt and pepper to taste
  • 2 cups water

Wash and singe chickens to remove hair. Rub inside and out with the lemon juice. Let stand for 15 minutes. Then rub inside and out with the salt pepper and oregano. Truss chicken and place in a roasting pan with 2 cups water. Place in a pre-heated 350° oven, allowing about 35 minutes cooking time per pound. Baste with drippings from pan every 25 minutes adding more water if neccessary to keep basting. At last 10 minutes of estimated cooking time, raise oven heat to about 500° and remove chicken from oven when skin turns golden brown. Let stand for 15 minutes before carving. Serves 6.
