Greek Recipe: Roast Duck

GREEK RECIPE: Roast Duck

  • 2 4.5lbs oven ready ducks
  • 4 Tbs butter
  • 1 onion minced fine
  • 1 6oz can tomato paste diluted with 6 oz water
  • 1 Tbs cround cloves
  • salt and pepper to taste

Wash and singe ducks. Rub inside and out with lemon juice. Let stand for 15 minutes, then wipe dry. Place ducks on a rack in a baking pan. Place in a pre-heated 325° oven allowing about 40 minutes per pound. Meanwhile heat butter in a skillet and saute onions until golden. Add diluted tomato paste and seasonings. Simmer uncovered for 30 minutes and set aside. After 1 hour of roasting, prick duck with a fork into body, wings and legs to draw out fat. At last hour of estimated roasting time, pour out all fat that has collected in the pan. Baste with the tomato sauce every 15 minutes until ducks are tender. Serves 6.
