Greek Recipe: Baked Cod Fillets in Sauce

GREEK RECIPE: Baked Cod Fillets in Sauce

  • 2 lbs fresh cod filets
  • 6 Tbs melted butter
  • 1 onion minced
  • 1/2 cup minced celery stalks
  • 2 cups solid pack tomatoes broken up
  • 1/4 tsp powdered thyme
  • salt & pepper to taste
  • 1 Tbs brown sugar
  • 2 Tbs white wine vinegar

Heat butter in a skillet and sautee onion and celery until golden. Add all other ingrediants except fish and bring to simmer covered 30 minutes. Cut filets into serving pierces and place in greased baking dish. Pour sauce over fillets and bake in a preheated 350° oven for 30 minutes or until you can flake fish easily with a fork. Baste every 10 minutes with liquid from baking dish. Serves 6.
