Greek Recipe: Broiled Sea Bass

GREEK RECIPE: Broiled Sea Bass

  • 4-4.5 lbs sea bass with heads and tails
  • 2 cloves garlic crushed
  • 1/3 cup parsley leaves minced
  • 2 Tbs olive oil
  • 2 cups water
  • salt & pepper to taste
  • 2 lemons sliced paper thin

 

Wash fish thoroughly and wipe dry. Cut deep wedges into sides of fish about 2" apart. Mix parsley and garlic together and stuff into wedges. Rub fish all over with olive oil. Place fish in a broiler pan with 2 cups water. Sprinkle with salt and pepper and place lemon slices over fish. Turn broiler to lowest flame and broil fish for 25 minutes. Transfer lemon slices to to bottom of pan and turn broiler to highest flame for 10 minutes or until skin turns brown and crusty. Transfer to a serving dish and serve with tomato pilaf. Serve with lemon wedges and a green salad. Serves 6.
