GREEK RECIPE: Fried Dried Codfish Fillets with Skordalia
Soak Codfish fillets in cold water to cover overnight. Rinse and change water several times. Drain and cut fillets into serving pieces. Rub fillets withlemon juice, wipe dry and set aside. Beat eggs and cold water slightly. Dip fish in flour, then in eggs and again in flour. Heat oil or butter in a pan and fry filletsuntil golden brown on one side. Tunr fillets over and fry until fish flakes easily with a fork. Serve with skordalia and lemon wedges. Serves 6.
