Greek Recipe: Stuffed Squid

GREEK RECIPE: Stuffed Squid

  • 12 squid about 4" long
  • 2 cups cooked rice
  • 1 small onion grated
  • 1 Tbs parsley leaves minced fine
  • 1 cup tomato puree
  • 1/4 cup olive oil
  • 1/4 cup dry white wine
  • salt and pepper to taste

Wash squid thoroughly. Cut of heads and discard. Remove inside cuttle bone with paring knife. Mix rice, onion, parsley, salt and pepper in a bowl. Stuff squid with the mixture. Sew tops securely. Place squid in a large Dutch oven side by side close together. Mix oil, puree and wine and pour over squid. Bring to a simmer covered for 25 minutes or untill squid turns bright pink. Serves 6.
