Greek Recipe: Potato Mousaka

GREEK RECIPE: POTATOES MOUSSAKA

  • 2 lbs. boiling potatoes
  • 1 cup olive oil
  • 2 lg. onions minced fine
  • 2 cloves garlis minced fine
  • 1 lb. lean grnd. beef
  • 1 tsp ground nutmeg
  • 1 cup tomatoe puree
  • 2 eggs
  • 1 cup milk
  • 3 oz. grated parmesan cheese
  • salt and pepper to taste

 

Boil potatoes in their skins in salted water for 10 minutes. Peel and slice 1/4 inch thick. Fry potatoes in all but 2 Tbs of oil until golden brown on each side. Set aside. Sautee onion aand garlis in same oil until soft but not brown. Add meat , nutmeg, salt and pepper. Simmer for about 10 minutes while moving back and forth to break meat into small bits. Add tomato puree and simmer 10 minutes more. Grease a baking dish and place 2 layers of potaotes on the bottom. Cover with meat sauce. Add another 2 layers of potatoes and meat untill last layer is potatoes. Beat eggs and milk with a little salt until well blended. Pour over potatoes. Sprikle top with 2 Tbs oil and the cheese. Bake in a preheated 375° oven for about 40 minutes or until tp becomes golden brown. Remove from oven and let stand for about 20 minutes to firm up before cutting into squares. Serves 6.
