Greek Recipe: Athenain Navy Bean Soup

GREEK RECIPE: Athenain Navy Bean Soup

  • 2 cups dried navy beans
  • 2 lb uncooked lamb bones
  • 1 lg onion minced
  • 2 Tbs parsley minced
  • 1 clove galic minced
  • 2 qts water
  • 2 cups tomatoe puree
  • salt and pepper to taste

 

Pick over and wash beans. Soak overnight in cold water. Place bones, water, salt and pepper in pot. Cover and bring to boil. Skim foam and reduce to simmer, covered for at least 2 hours.Drain beans and add to pot and simmer covered for at least 2 hours. remove bones and add all other ingrediants. Simmer covered for 30 minutes more or until beans are tender. Vegetarians may omit the bones and add 2 Tbs vinegar and 2 Tbs olive oil when the soup is done.

Serve immediately. Serves 6.
