Greek Recipe: Trahana Soup

GREEK RECIPE: Trahana Soup

  • 1 lg onion minced
  • 6 Tbs olive oil
  • 1.5 qts boiling water
  • 1 6oz. can tomato paste diluted with 6 oz water
  • 1/2 cup dry red wine
  • 1 cup trahana
  • salt and pepper to taste

Heat oil in a skillet. Add onion and satee until golden. Add boiling awater slowly. Add diluted tonato paste, salt and pepper. Bring to a boil, add wine and trahana. Stir thoroughly so thet the trahana pasta dopes not stick together. Bring to simmer uncovered for ten minutes. Serve immediately. Serves 6.
