Greek Recipe: Stewed Lamb with Garbanzo Beans

GREEK RECIPE: Stewed Lamb with Garbanzo Beans

  • 1.5 cups dried garbanzos
  • 2 lbs lean lamb cut into 1" pcs
  • 6 Tbs butter
  • 1 lg onions chopped
  • 1 clove garlic minced
  • 1 tsp dried spearmint leaves
  • 1/2 tsp parsley flakes
  • 1 No. 2 can solid pack tomatoes broken up
  • salt and pepper to taste

 

 

Bring beans to a boil uncovered for one hour in the water in which they soaked. Drain beans and set aside. Heat butter in a pot and sautee onion and galic until golden. Add meat and brown. Add beans and all other ingrediants and bring to simmer covered for about 2 hrs. or until meat and beans are tender. Serves 6.
